The “Candied Droolius” – YumYum Red Velvet Cupcake w/ candied Big Wheel Bacon

A few months ago I was contacted by the Yum Yum Cupcake Truck about doing a collaboration on a cupcake. Basically I would give them a few ideas for a cupcake and they would create one. I’ve always wanted to create my own cupcake with a bake shop, and this was the perfect opportunity. I let them know the Droolius blog anniversary was coming up in August and we all agreed it would be the perfect time to release a cupcake in honor of the 2-year Anniversary.

When I thought of flavor combinations that I liked, I suggested “strawberry with coconut shavings”, vietnamese coffee, matcha green tea, “peanut butter and jelly”. Those were possible contenders for a “Droolius Cupcake”, but those didn’t really push creativity. I wanted something that screams “DROOLIUS” and is more of a signature flavor combo, so I thought BACON. Not sure if Yum Yum would even consider doing another cupcake with bacon (which they made one last Fall), but I went ahead and pitched them on the idea of making something similar to my Red Velvet Donut with Candied Bacon recipe. Maybe add a cream cheese or maple frosting on top with a sprinkle of candied bacon. Yum Yum’s reply was: “I think that if you want candied bacon, then you should get candied bacon!”

Well that is just awesome! The Yum Yum team did not disappoint either. They decided to enlist the help of a fellow food truck that makes their own bacon, Big Wheel Truck. So in every cupcake not only do you get a taste of Yum Yum, you get a taste of Big Wheel’s hand crafted bacon too.

Here’s the details of the Candied Droolius cupcake, straight from Yum Yum Cupcake Truck:

“A Yum Yum version of a “Droolius Remixed” Classic Red Velvet Cake. The cake batter is mixed with Big Wheel Bacon Fat. The cupcake uses Big Wheel Bacon that has been Candied and baked in the Yum Yum Cucina. Some of the Candied bacon is folded into Classic Yum Yum Creamed Cheese frosting and remixed as the filling. For an added Droolius touch; we used the Droolius Donut Glaze Recipe that was offered in his Red Velvet Bacon Donut Recipe. Candied bacon is generously added to the top of the glaze to showcase this one-of-a-kind cupcake.”

I was gifted a dozen of these bad boys last weekend, in celebration of my birthday and the blog’s 2-year Anniversary. The taste of this cupcake is amazing! I’m not exaggerating either. A few of my friends & family who have tasted, along with the Yum Yum staff, all agree that this is one great cupcake. When you bite into the cupcake, you inhale the scent and get a taste of the sugary candied bacon, right before you break through the crisp donut glaze. Donut glaze on a cupcake is brilliant! Something I did not expect them to do because I envisioned a cream cheese or maple frosting. I think the glaze was a better idea, highlighting the candied Big Wheel bacon and not covering it up by adding another flavor profile.

The cupcake itself is light in texture, with the Big Wheel Bacon Fat adding a touch of savoriness. When you hit the middle, you get a taste of creamed cheese filling with bits of candied bacon mixed in as well. The gentle smokiness of the bacon really balances everything out and overall the cupcake is not too sweet. The Big Wheel Truck’s bacon was a great match in this recipe to be candied and Yum Yum Truck did a great job of utilizing their house made bacon. This makes me really happy and proud that these food trucks worked together again to make a really special product and I’m honored to collaborate with them for the anniversary. The cupcake is just an overall balanced flavor of savory and sweet, along with its creamy filling and crisp textures from candied bacon and glaze.

So where can you get this magnificent cupcake creation? The Yum Yum Cupcake Truck will be selling the Candied Droolius at only a few select Food Truck Events during the remainder of August.

• Following week on Wednesday, at Maitland’s Lake Lily, August 29, 2012 from 6-9pm
Aug. 29 date is POSTPONED, I will announce the new date when I find out.
